WERMUTSTROPFEN: NOTES AND EXERCISES

Note 1.1
fermented mash (molasses, white cane sugar, yeast, water), copper piping, stainless steel keg, tri-clover clamp, immersion heater, phase angle controller, cork, plastic bucket, water

Note 1.2
The design of the Neue Nationalgalerie in Berlin originates from Mies van der Rohe’s unrealised plans from 1957 for the headquarters of a rum manufacturer in Santiago de Cuba. The design for the rum headquarters itself was distilled into another unrealised proposal for the Georg Schäfer Museum in Schweinfurt, under consideration between 1960 and 1963.

Exercise 1.1
Stories from the past are encountered as the distillation of different nows, and ideas ferment like the rise and fall of regimes. This wasn’t necessarily an ode to the client, just a reflux that sustained some energy over a long period of time, moving elsewhere, refined to another perfection.

We had the best time, it was an uproar.

Exercise 1.2
spiced rum, gelling agent
